2018: McCoy recorded a history season at the net with 76 total block on eight solo blocks and 68 block assists. Her 68 block assists rank as the fifth-most in a single season in Patriot history while her 0.94 blocks per set are sixth-most. For her career, McCoy has tallied 164 block assists and 183 total blocks which rank fourth and fifth in UT Tyler history. Her 0.89 career blocks per set also rank fourth-highest in program history. McCoy also added 179 kills and was second on the team with a .337 attack percentage which is sixth-highest in UT Tyler history for a single season. She also added 50 digs and 18 service aces as a junior. At the end of the season, she was named All-ASC East Division Second Team.

2017: Continuing to dominate at the net, McCoy tallied 50 total block with six solo and 44 block assists. The total was fourth-most on the team while her .271 attack percentage was second-best among the Patriots. She also tallied 75 kills and 14 service aces on the season.

2016: Playing in 63 sets as a freshman, McCoy was a force at the net with the second-most blocks for the Patriots. She totaled 57 with five solo and 52 block assists. With 11 block assists on October 15, McCoy set the Patriot record for block assists in a single match. The 11 total blocks in the match rank as second-best in program history. Offensively, McCoy was second on the team in attack percentage among qualifying players with a .279. She totaled 77 kills and added 14 service aces.
